Cooking for the Family – Lent
Here is a quick and easy meat free recipe for those fast days
Oatmeal Pancakes
Ingredients
- 1 1/4 cups of Soy milk
- 1 cup rolled oats
- 1 Tablespoon oil
- 2 Eggs beaten
- 1/2 cup Whole wheat flour
- 1 Tablespoon brown sugar
- 1/4 teaspoon salt
Directions
- Combine the Rolled Oats and the Milk and let stand five minutes
- Then mix the rest of the ingredients
- Ladel into a hot pan that is greased with butter or oil

Now if you are on the Strict Orthodox fast, then the oil blows it. You could try to substitute Applesauce for the oil, and use nonstick spray rather than butter or grease.
