Cooking for the Family – Lent
Here is a meatless sauce for pasta.
Meatless Spaghetti Sauce
A Meatless
Ingredients
- 2 cups diced onions
- 2 cups diced green peppers
- 1 cup diced celery
- 2 garlic cloves minced
- 1 tbs oil (Optional)
- 4 cups diced fresh tomatoes
- 2 cups sliced fresh mushrooms
- 1 can (15oz) tomato sauce
- 2 cans (6oz each) tomato paste
- 1/2 cup burgundy wine or water
- 2 Tbs sugar
- 1 Tbs red wine vinegar or cider vinegar
- 2 Tbs minced fresh basil (or 2 tsp dried)
- 2 Tbs minced fresh oregano (1 tsp dried)
- 1 tbs minced fresh parsley (1tsp dried)
- 1 tsp dried rosemary
- 1 bay leaf
- 1 tsp salt
- 1/4 tsp pepper
Directions
- Add all Ingredients, bring to a boil. Reduce heat, cover and simmer for 1 1/2 hrs. Discard Bay leaf.
